I like to make my own version of the popular takeaway foods, including these super tasty chicken and turkey kebabs. They are great for any BBQs, picnics or simply for weekday meals. The only things you need are just a few fresh ingredients and quick preparation in the kitchen to create these gorgeous and healthy skewers.

Ingredients

  • 750g chicken breast (you can use a combination of chicken and turkey meat – breast or thighs, just like I did here, or try it with oily fish like salmon)
  • 1 tbsp lemon juice
  • 1 tbsp soy sauce
  • 1 tbsp smooth peanut butter (sugar-free preferably)
  • 2 tbsp sweet chilli sauce
  • 1 tsp dried chilli flakes
  • 1 tsp smoked paprika
  • 1 tsp soft light brown sugar
  • Salt and pepper to taste

Method

Depending on your preferences and on the type of meat you are using, dice or slice the meat up into cubes or long, thick stripes.

In a deep mixing bowl, combine all of the ingredients for the marinade, give it a taste and adjust it according to your taste buds. Fold the meat in and make sure every piece is equally covered in the marinade.

Cover the bowl and leave them to soak up all of the flavours overnight (or at least for a couple of hours).

When you are ready to cook them, fire up the grill or, alternatively, use a grill pan or the oven for indoor cooking. The trick is to make sure whatever method you use to cook them, use really high heat. You want the meat to be dark and crispy on the outside, soft and juicy on the inside. If you are using a grill pan, heat it up properly before you place the kebabs in (meat normally sticks to the pan when it’s not hot enough). If you bake the kebabs in the oven, preheat it to Gas mark 8 (220C) and turn them over occasionally to make sure they cook evenly.
