Heaven in one small baking tray. I think this is the best way to describe these rich, chocolatey and gooey brownies. Use good quality dark chocolate for the heavenly flavour and creamy cottage cheese for the nice soft texture and to make it rich in protein. Add some extra chopped nuts, mix all of the ingredients together and then just enjoy. Easy peasy. 🙂


  • 200g Swiss (or any other good quality) dark chocolate (at least 70%)
  • 200g unsalted butter
  • 3 large eggs
  • 200g soft light brown sugar
  • 200g full fat cottage cheese
  • 1 tsp vanilla extract
  • 125g plain flour
  • 1 tsp baking powder
  • 1 pinch of salt
  • A handful of chopped nuts (any nuts you like)


Preheat the oven to 180 C (Gas Mark 4) and line a 24 cm square baking tray with baking paper.

Cut up dark chocolate and butter into small cubes and place them in a small saucepan. Heat it up very gently, over low heat, until just melted (keep stirring it constantly), then let it cool down a little bit.

In a small mixing bowl, combine flour, baking powder and a pinch of salt.

In another mixing bowl, mix eggs and sugar until it’s fluffy, then stir in the cottage cheese and vanilla extract, followed by the melted chocolate.

Add the dry ingredients alongside with the chopped nuts and combine them well.

Pour the brownie mix into the baking tray and place it in the oven for about 20-25 minutes. You don’t want to overcook it so, unlike cakes, you don’t want a skewer to come out clean – the brownies should be slightly firm and cracked on the outside, but still gooey in the middle.

Allow to cool in the tray, then serve the brownies with your favourite ice-cream. (Super amazing with coffee flavoured ice-cream).
