These lovely scones are the perfect companions of any soup or tea time parties. They are so soft and melt easily in your mouth, plus you don’t even need to knead the dough. They are the perfect savoury treats for any occasion.
- 300g all-purpose flour
- 200g cottage cheese
- 200g unsalted butter
- 100g Cheddar cheese (grated)
- 1 sachet of dried yeast
- ½ tsp sugar
- 1 tsp salt
- 1 egg yolk
* Each ingredient should be at room temperature.
For the top of the scones
- 1 egg white
- 50g Cheddar cheese (grated)
- 2 tbsp poppy seeds or sesame seeds
In a large mixing bowl, place flour and soft butter, then rub in with your fingers until the mix looks like fine crumbs. Stir in all of the rest of your ingredients (cottage cheese, Cheddar cheese, egg yolk, yeast, sugar and salt) and mix it up. Combine everything well until you get a flexible dough (add some more flour if it needs it).
Leave it in the fridge for overnight and bake them on the next day.
Take your dough out from the fridge and leave it for an hour to warm up to room temperature.
Preheat the oven to gas mark 6, 200 C and line a baking tray with baking parchment.
Stretch the dough into a 2 cm thick layer and take a 5cm cutter and dip it into some flour. Plunge into the dough, then repeat until you have enough dough for making a scone (try not to waste a single crumble).
Place them on the baking tray, brush the tops with egg white and strew them with your choice of seeds and some grated cheese.
Bake them for about 15 minutes or until risen and golden on the top.
