When I say these baked goods are cheesy, I don’t mean that I just sprinkled some cheese on the top. I take cheese seriously as it is one of my favourite snacks in the world. 🙂 So, these straws contain a serious amount of different types of amazingly delicious cheese. Choose your favourite ones and combine them.
- 300g all-purpose flour
- 1 tsp baking powder
- 300g unsalted cold butter (cut into cubes)
- 300g grated cheese (Cheddar, Edam, Parmesan)
- 2 large egg yolks
- 1 tsp salt
- 1-1 tsp smoked paprika and dried oregano
For the top
- 2 large egg whites
- more grated cheese (about 50g Cheddar or Parmesan)
In a large mixing bowl, sift flour and baking powder, then add salt, paprika, oregano and butter cubes. Using your fingertips, rub in the butter until the texture is smooth like vet sand or fine breadcrumbs.
Stir in the egg yolks and the grated cheese, combine them well to get a firm dough. Add 1-2 tablespoon of cold water or milk if it looks too dry.
Preheat the oven to gas mark 5 (190 C) and line a baking tray with baking parchment.
Roll out the dough on a flour-sprinkled surface into a 1 cm thick square.
Brush the top of the dough with egg whites and sprinkle over some more grated cheese. Cut the square in half, then cut each half into 1cm strips.
Transfer them carefully onto the lined baking tray and bake for 10-15 minutes, until the straws are crisp and the cheese is golden brown on the top.
